We have couple of Hibiscus plants but not sure what/how to take care of them before winter comes? One of them is still doing really well but another one looks a little sick.

It really depends on WHERE in Texas you are. We're in the southern part of East Texas, and we generally move our potted hibiscus into a greenhouse for the winter, just before the first predicted frost, and leave it there until after the last chance of any frost is long gone.
Talk to someone at your local nursery and see what they recommend.
